CHOCOLATE PEANUT BUTTER PROTEIN COOKIES


When I was growing up in my childhood home, every year for the holidays my mom would bake cookies. Now that I am older and a parent myself, I often enjoy cooking and baking things. One day while having coffee and talking with the Mrs., I stated that I wanted cookies. I wanted something that was going to be fast to make, high in protein, and low in carbohydrates. I wanted the cookies to follow my BLT method of eating.

BLT method is as follows:

Be good for you
Look good to your sight
Taste good as your eating it

So, I came up with a 4 ingredient recipe. The ratio to remember is 2:1:1:½. Unless you are using real sugar, then it’s 2:1:1:1. Either way you make these cookies will be fine. I have even thought about substituting the stevia or sugar for honey.

RECIPE & INGREDIENTS
  • 2 whole eggs
  • 1 cup protein powder (chocolate) 
  • 1 cup natural peanut butter (creamy or chunky)
  • 1/2 cup stevia
DIRECTIONS
  1. Combine in mixing bowl. 
  2. Roll into medium size balls. 
  3. Place on lined baking sheet.
  4. Bake in oven @ 350° for 8-12 minutes.
  5. Cool completely and enjoy.
