EGG WHITE BISCUIT


Some time ago, I was on a low-to-no carb nutrition plan. That's when I first discovered how to make an egg white biscuit. I wanted a biscuit, badly, and I was tired of making eggs the same old way. I was getting so tired of making scrambled or fried eggs. I searched YouTube high and low for ideas. Then, lo and behold, I found a video by 2 brothers who made eggs approximately 10 different ways. One of the ways I remember was seeing them take a whole egg and separating the white and yoke, using the egg white and a whisk (or a hand mixer) to blend up the egg white until it stiffened into a Meringue type consistency, and then placing the egg white onto a lined baking tray and putting it in the oven at 350° for 10 minutes or until it was crispy. Their egg white biscuit came out perfect. Then, they took the remaining yolk, added it to another whole egg, and cooked it. They placed the fried egg onto the egg white biscuit to make an amazing and tasty carbless sandwich.

I recently made this egg white biscuit and seasoned it with salt and pepper. Then, to make my sandwich, I layered the biscuit with a scrambled egg (made from a whole egg and the remaining egg yoke), a cooked sausage patty, and a deli slice of Colby Jack cheese. Man-O-Man was this delicious and carbless! I made two, one for my wife and the other for myself.

Recipe Ingredients and Instructions:

2 Whole eggs
(NOTE: Liquid eggs will not work because the are pasteurized and will not stiffen up)
Optional: Breakfast Meat and Cheese


  1. Seperate the egg yoke from the egg white in a bowl.
  2. Mix egg white with mixer or whisk until stiff peaks are formed.
  3. Spread out evenly on a *lined baking pan.
  4. Bake in preheated oven at 350° for 10 minutes, or until crispy.
  5. Cool before assembling egg white biscuits into a sandwich.
