5 INGREDIENT PEANUT BUTTER CAKE BITES


Late one morning, my wife Sarah and I sat on the couch drinking some coffee and eating a post workout meal. We started talking about peanut butter cookies. We like the 3 ingredient peanut butter cookies we’ve seen and tried before. However, we wanted to make them better with a higher protein amount. Hence, we started to formulate ideas on how we could improve them and make them are own.

She came up with using PB2 Powered Peanut Butter and a scoop of protein powder, added to the original recipe. After tasting hers, I decided to make another batch, but I used Smuckers Natural Crunchy Peanut Butter instead of the PB2, and I doubled the protein powder. They turned out well, but not as "cookies" in texture. They are more like cake bites. 

After only 10 minutes in the oven, a shiny, spongy, dense, crunchy, peanut buttery goodness was taken out of a heated 350° oven. I cut the protein "cake" in half and then in half again to make BIG "bites." 

 

The serving size is two pieces, and the macros are as follows: 8g Carbs, 16g Fat, 33g Protein. This receipe is a wonderful complement for people whose nutrition plans, such as Keto, require "low to no" carbohydrates. Though my wife and I prefer to look at it as high protein, low carb. 

Bottom Line: We really enjoyed collaborating on this recipe. We love the taste, we enjoyed using only 5 ingredients for quick preparation, and we like the short 10 minute baking time.we even tried topping them with cream cheese or maple syrup. Recipe Ingredients and Instructions:
3 Tbsp natural peanut butter (Smuckers)
2 Scoops of protein powder (Bodylogix Ultra Whey)
1 Whole egg
1/4 tsp baking powder
1/4 Cup water
*stevia packet (optional)

Place all ingredients in a bowl. 
Mix until combined. 
Spread out evenly on a *lined baking pan. 
Bake in preheated oven at 350° for 10 minutes.
Cool completly before cutting and serving.
